Rajasthan is the benchmark origin for cumin
India grows most of the world's cumin and Rajasthan grows most of India's, which is why a specification often just says Rajasthan cumin and expects everyone to know what that means. Being inside that belt is a real advantage on this item: the crop is close to our cleaning and milling, and the trade is standardised enough that a specification written for one season still means the same thing the next. Essential oil content of 2.5-4% is stated per lot.
Cleaned seed, powder and essential-oil grade
Cleaned whole seed is the volume item and goes to spice blenders and food processors. Powder is milled to the mesh the buyer specifies. Essential-oil grade is selected on oil content rather than on appearance, and is bought by distillers who care about yield and about cuminaldehyde rather than about how the seed looks. Those are genuinely different selections from the same crop, so telling us the end use changes what we put in front of you.
Machine cleaning, moisture and admixture
Cumin is bought on cleanliness as much as on aroma. We machine clean to a stated purity and put moisture, held at or below 10%, and admixture on the COA. Buyers milling to powder generally specify a tighter clean than buyers using whole seed, because anything that survives cleaning ends up in the powder and cannot be taken out afterwards.
