Who sources this ingredient
Black, white and ground chia, and which one to specify
Black and white chia are the same species and the same nutritional profile; the difference is appearance, and it matters only where the seed is visible in the finished product. Bakery and beverage lines that want the seed to disappear take white; bars, crackers and toppings usually take black. Ground chia is milled to order rather than held in stock, because the oil fraction is what makes it useful and a pre-ground seed sitting in a warehouse is the fastest way to lose it.
