Natural, hulled, black and roasted
Natural seed keeps its hull and is what oil millers and most bakery toppings take. Hulled seed has the hull removed, which is what tahini and halva production needs because the hull carries the bitterness. Black sesame is a different market again, largely East Asian food and bakery, bought as much for appearance as for flavour. Roasted is supplied where the buyer would rather not run a roasting step. The hulling decision is the one that changes both price and application, so it is the first thing to settle on an enquiry.
Why ~50-53% is the number millers ask for first
Sesame is bought by oil millers on yield, and at ~50-53% oil content this is one of the densest oilseeds in the trade. Protein sits at ~17%, which is what interests food formulators rather than crushers. Sesamin and sesamolin are the compounds behind the seed's oxidative stability, and they are why sesame oil keeps far better than most unrefined seed oils. Every lot ships with the oil figure stated so a miller can calculate yield before committing.
A 1 year shelf life, and what that implies for ordering
Sesame is high in oil, and high-oil seed does not sit well. We state shelf life at 1 year rather than the 2 years most of this catalog carries, because that is the honest figure for a seed at 50% oil. Buyers running steady volume are better served by scheduled part-shipments than by one large order held in a warehouse.
