White, red, black and tri-colour
White quinoa is the mildest and the softest cooking, and it is what most cereal, bowl and food-service buyers take. Red holds its shape better and is chosen where the grain has to stay distinct in a salad or a ready meal. Black is firmer again and mostly bought for appearance. Tri-colour is a blend and is sold on the look. All four are the same species and the same nutritional profile, so the choice is texture and appearance rather than substance.
