Whole seed, powder and essential-oil grade
Whole seed is the volume item for spice, confectionery and mouth-freshener use. Powder is milled to a specified mesh for blenders. Essential-oil grade is selected on oil content rather than on appearance and goes to distillers, who care about yield and anethole rather than about how the seed looks in a jar. These are genuinely different selections from the same crop, so telling us the end use changes what we put in front of you rather than just the price.
80-90% of the oil, and 1.5-3% oil in the seed
Anethole is what gives fennel its sweet aniseed character and it makes up 80 to 90% of the essential oil. Total oil content in the seed runs 1.5 to 3%. Distillers buying on yield ask for the oil figure; flavour houses buying on character ask for the anethole share. Both are stated per lot. A quote that gives you one when you needed the other is not comparable to one that gives you the right number.
Spice, tea and essential-oil
Spice blenders and confectionery take whole and powder. Tea blenders take fennel as a digestive-blend component, often alongside dried mint and coriander from the same desk.
