Zanthoxylum, and the numbing effect
Sichuan pepper is not related to black pepper or to chilli. It is the husk of a Zanthoxylum berry, and its defining property is not heat but a tingling numbness produced by hydroxy alpha sanshool, alongside a citrus aroma. That effect is the reason food manufacturers buy it, and it is also why substituting anything else for it does not work in a formulation designed around mala flavour.
Whole berries, de-seeded husks and powder
De-seeded husk is the premium grade and the one serious buyers specify: the seed carries grit and no flavour, so its presence is a purity issue rather than a taste one. Whole berries are cheaper and fine where the buyer sifts. Powder is milled to specification. Red Sichuan is the standard aromatic type. MOQ 100 kg with a COA on every lot.
